Salmon:

  • 4 salmon fillets (6 ounces each)
  • Salt and black pepper to taste

Creamy Tuscan Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Season the salmon: Season the salmon fillets with salt and pepper on both sides.
  2. Sear the salmon: In a large skillet, heat olive oil over medium-high heat. Sear the salmon fillets for 4–5 minutes per side or until golden and cooked through. Remove from the pan and set aside.
  3. Prepare the sauce: In the same skillet, reduce heat to medium and add garlic. Sauté for 1 minute until fragrant. Add cherry tomatoes, sun-dried tomatoes, and spinach, cooking until the spinach wilts. Pour in the heavy cream and stir in Parmesan cheese, Italian seasoning, and red pepper flakes if using. Simmer for 2–3 minutes until the sauce thickens slightly.
  4. Combine and serve: Return the salmon to the skillet and spoon the creamy sauce over the top. Simmer for another 2 minutes to warm everything through. Garnish with fresh basil if desired and serve immediately.
