Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts or thighs

Sauce:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup sliced pepperoncini peppers (plus 1–2 tablespoons juice)
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Season the chicken: Season the chicken on both sides with salt and pepper.
  2. Sear the chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side. Remove chicken and set aside.
  3. Make the sauce: Reduce heat to medium, add garlic and sauté until fragrant. Pour in chicken broth, scrape up any browned bits. Stir in cream, pepperoncini, Parmesan, oregano, and red pepper flakes. Simmer until slightly thickened.
  4. Combine and simmer: Return chicken to skillet, spoon sauce over the top, and simmer to heat through. Garnish with parsley before serving.
