Pasta:
- 8 ounces pasta (spaghetti, linguine, or rigatoni)
Sauce:
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves (minced)
- 1 small shallot (finely chopped)
- 1 tablespoon gochujang (Korean chili paste)
- ½ cup heavy cream
- ¼ cup whole milk
- 1 teaspoon soy sauce
- 1 teaspoon rice vinegar or lemon juice
- ½ teaspoon sugar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
- Sliced green onions and toasted sesame seeds for garnish
Instructions
- Cook pasta: Boil pasta until al dente. Reserve pasta water.
- Prepare sauce: Sauté garlic and shallot. Add gochujang, cream, milk, soy sauce, vinegar, sugar, salt, and pepper. Simmer.
- Combine: Toss cooked pasta with sauce and Parmesan cheese. Add pasta water to adjust consistency.
- Serve: Garnish with green onions and sesame seeds.
