Sauce:

  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves (minced)
  • 1 small shallot (finely chopped)
  • 1 tablespoon gochujang (Korean chili paste)
  • ½ cup heavy cream
  • ¼ cup whole milk
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar or lemon juice
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • Sliced green onions and toasted sesame seeds for garnish

Instructions

  1. Cook pasta: Boil pasta until al dente. Reserve pasta water.
  2. Prepare sauce: Sauté garlic and shallot. Add gochujang, cream, milk, soy sauce, vinegar, sugar, salt, and pepper. Simmer.
  3. Combine: Toss cooked pasta with sauce and Parmesan cheese. Add pasta water to adjust consistency.
  4. Serve: Garnish with green onions and sesame seeds.
