Description

Chicken Tetrazzini Casserole is a comforting and hearty family favorite featuring tender shredded chicken, spaghetti, and sautéed mushrooms and onions, all combined in a creamy sauce and topped with melted cheese. Baked to bubbly perfection, this casserole makes a satisfying meal perfect for weeknight dinners.

Ingredients

Scale

Protein and Pasta

  • 2 cups cooked chicken, shredded
  • 8 oz spaghetti, cooked

Vegetables

  • 1 cup mushrooms, sliced
  • 1/2 cup onion, diced

Liquids and Dairy

  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1/4 cup butter

Seasonings

  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking your casserole.
  2. Sauté Vegetables: Melt the butter in a skillet over medium heat. Add the diced onions and sliced mushrooms, cooking and stirring until they become soft and fragrant, about 5-7 minutes.
  3. Combine Ingredients: In a large mixing bowl, combine the shredded cooked chicken, cooked spaghetti, sautéed onions and mushrooms, chicken broth, sour cream, garlic powder, salt, and black pepper. Mix thoroughly so all ingredients are well incorporated.
  4. Assembly: Grease a casserole dish with butter or non-stick spray. Transfer the prepared mixture into the casserole dish, spreading it evenly.
  5. Add Cheese Topping: Sprinkle the shredded cheese evenly over the top of the casserole mixture.
  6. Bake: Place the casserole dish in the preheated oven. Bake for 30 minutes, or until the cheese is melted, bubbly, and slightly golden on top.

Notes

  • For a lower-fat option, substitute sour cream with Greek yogurt and use reduced-fat cheese.
  • You can use either fresh or canned mushrooms depending on availability; just ensure they are drained properly if canned.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Adding some cooked peas or steamed broccoli can boost the vegetable content and add color.
  • Make sure the spaghetti is cooked al dente to prevent it from becoming too mushy in the casserole.
