- 1 cup heavy cream
- 1 cup whole milk
- 16 oz potato gnocchi
- 2 cups fresh spinach, chopped
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp salt
- ½ tsp ground black pepper
- ¼ cup grated Parmesan cheese
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thicker soup)
Instructions
- Prepare the Soup Base: Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened. Add garlic and cook until fragrant.
- Cook the Chicken: Brown chicken pieces in the pot. Season with thyme, basil, salt, and pepper.
- Add Broth and Gnocchi: Pour in chicken broth and simmer. Add gnocchi and cook until they float.
- Finish the Soup: Stir in heavy cream, milk, spinach, and Parmesan. Add cornstarch slurry for a thicker consistency if desired. Adjust seasoning.

- For richer flavor, use leftover roasted chicken and add after cooking gnocchi.
