Description

Indulge in the rich and comforting flavors of this Creamy Chicken Gnocchi Soup. Loaded with tender chicken, pillowy gnocchi, and a creamy broth, this soup is a satisfying meal perfect for any night of the week.

Ingredients

Scale

For the Soup:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 16 oz potato gnocchi
  • 2 cups fresh spinach, chopped
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ cup grated Parmesan cheese
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thicker soup)

Instructions

  1. Prepare the Soup Base: Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened. Add garlic and cook until fragrant.
  2. Cook the Chicken: Brown chicken pieces in the pot. Season with thyme, basil, salt, and pepper.
  3. Add Broth and Gnocchi: Pour in chicken broth and simmer. Add gnocchi and cook until they float.
  4. Finish the Soup: Stir in heavy cream, milk, spinach, and Parmesan. Add cornstarch slurry for a thicker consistency if desired. Adjust seasoning.

Notes

  • For richer flavor, use leftover roasted chicken and add after cooking gnocchi.
  • This soup pairs well with crusty bread for dipping.
  • Can be made ahead and refrigerated for up to 3 days.
