  • 1 tablespoon olive oil
  • 1 pound smoked sausage or kielbasa, sliced into rounds
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups green cabbage, shredded
  • 2 medium potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1/2 cup chopped fresh parsley

Instructions

  1. Heat the Olive Oil: In a large pot over medium heat, heat the olive oil. Add the sausage slices and cook until browned on both sides. Remove and set aside.
  2. Sauté Vegetables: In the same pot, add onion and carrots, cooking until softened. Stir in the garlic and cook for 1 minute. Sprinkle in the flour and stir until vegetables are coated.
  3. Add Broth and Ingredients: Slowly pour in the chicken broth while stirring. Add cabbage, potatoes, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
  4. Finish the Soup: Return sausage to the pot and stir in the cream. Simmer for an additional 5 minutes. Adjust seasoning if needed. Garnish with fresh parsley before serving.
