Description

Indulge in this rich and creamy Coffee Cheesecake, blending the smooth texture of classic cheesecake with the bold flavor of espresso. The graham cracker crust provides a perfect crunchy base, while the coffee-infused filling offers an irresistible taste ideal for coffee lovers and dessert enthusiasts alike.

Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons butter, melted

Filling

  • 24 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 2 tablespoons instant coffee or espresso powder dissolved in 2 tablespoons hot water
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix well, then press this mixture firmly into the bottom of a springform pan to form an even layer.
  2. Bake the Crust: Bake the crust in the preheated oven for 8 to 10 minutes until set and slightly golden. Remove from the oven and allow it to cool completely before adding the filling.
  3. Mix the Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add 3/4 cup sugar and mix until fully blended and creamy.
  4. Add Eggs: Add the eggs one at a time, mixing on low speed after each addition to incorporate them fully without overbeating.
  5. Combine Remaining Ingredients: Blend in the sour cream, heavy cream, dissolved coffee mixture, vanilla extract, and flour. Beat until the mixture is smooth and evenly combined, ensuring no lumps remain.
  6. Assemble and Bake: Pour the filling evenly over the cooled crust and smooth the surface with a spatula. Bake in the oven at 325°F (163°C) for 50 to 60 minutes. The center should be slightly set but retain a slight jiggle when gently shaken.
  7. Cool Gradually: Once baking time is complete, turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour to prevent cracking and ensure even cooling.
  8. Refrigerate: Remove the cheesecake from the oven and chill in the refrigerator for at least 4 hours, preferably overnight, to fully set before slicing and serving.

Notes

  • For a more intense coffee flavor, increase the espresso powder slightly in the filling.
  • Top with whipped cream or drizzle with chocolate sauce for an extra indulgent finish.
