Description
Cloud Bread is a light, fluffy, and low-carb alternative to traditional bread, perfect for those following gluten-free or ketogenic diets. Made primarily with eggs and cream cheese, this simple recipe produces soft, airy rounds that can be enjoyed as a sandwich base or a snack. It’s easy to prepare and customizable for either sweet or savory flavors.
Ingredients
Scale
Egg Mixture
- 3 large eggs (separated)
- 3 tablespoons cream cheese (softened) or Greek yogurt
- 1 tablespoon sugar (optional, for slight sweetness)
- Pinch of salt
Egg White Mixture
- 1/4 teaspoon cream of tartar
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking and to ensure easy cleanup.
- Separate Eggs: Carefully separate the egg whites and yolks into two clean, large bowls to prepare for mixing.
- Mix Egg Yolks with Cream Cheese: Add the softened cream cheese (or Greek yogurt), sugar if using, and a pinch of salt to the bowl with egg yolks. Whisk thoroughly until the mixture becomes smooth and creamy.
- Beat Egg Whites: In the other bowl, add cream of tartar to the egg whites. Using an electric mixer, beat the egg whites until they form stiff peaks, meaning the peaks stand firm when the beaters are lifted.
- Fold Egg Whites into Yolks: Gently fold the beaten egg whites into the egg yolk mixture in batches. Use a spatula and careful folding motions to keep the mixture airy and prevent deflating the batter.
- Shape the Cloud Bread: Spoon the combined mixture onto the prepared baking sheet, creating 6 to 8 even rounds. Smooth the tops lightly if needed.
- Bake: Bake in the preheated oven for 25–30 minutes, or until the cloud breads are golden brown and fully set.
- Cool: Allow the cloud bread to cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely before serving.
Notes
- For a savory version, omit the sugar and add garlic powder, herbs, or spices to the egg yolk mixture.
- Store cloud bread in an airtight container in the refrigerator for up to 3 days.
- Cloud bread freezes well; freeze in a sealed container or bag for longer storage.
- Toast cloud bread before serving to enhance texture and flavor.
