  • 1 cup brown sugar
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and butter a 9-inch square baking dish or individual ramekins.
  2. Prepare the dates: In a bowl, combine chopped dates and boiling water. Stir in baking soda and let sit for 10 minutes to soften.
  3. Make the batter: Cream together the butter and brown sugar, beat in the eggs, add vanilla, and mix in the soaked dates.
  4. Add dry ingredients: Whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring just until combined.
  5. Bake the pudding: Pour the batter into the prepared dish and bake for 30–35 minutes until a toothpick comes out clean.
  6. Prepare the toffee sauce: Cook butter, brown sugar, and cream in a saucepan until slightly thickened. Stir in vanilla and salt.
