- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 3 large eggs, room temperature
- 1 1/2 teaspoons vanilla extract
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/2 cup sour cream or plain Greek yogurt
- 1/4 cup milk

- 1 recipe cream cheese frosting
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Mix wet ingredients: In a large bowl, beat the butter, oil, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract and mashed bananas. Stir in sour cream and milk.
- Combine and bake: Gradually mix in the dry ingredients until just combined. Pour batter into prepared pan(s) and bake for 35–40 minutes (or 28–32 minutes for round pans) until a toothpick inserted into the center comes out clean.
- Cool and frost: Let the cake cool completely before frosting with cream cheese frosting, if desired.
Notes
- For a layered cake, double the frosting recipe.
- You can add chopped walnuts or mini chocolate chips for added texture.
- The cake can be made a day ahead and stored covered at room temperature or refrigerated.
