For the Banana Bread:

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, whisk together the mashed bananas and melted butter until smooth. Add the sugar, eggs, and vanilla extract, and mix until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add the dry ingredients to the banana mixture and stir until just combined.
  4. Add nuts: Fold in the chopped nuts if using.
  5. Bake: Pour the batter into the prepared loaf pan and spread evenly. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra moisture, use very ripe bananas with lots of brown spots.
