Description

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and black pepper to taste
  • 1/4 cup all-purpose flour

Additional Ingredients:

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup dry red wine (or additional broth)
  • 4 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Prepare the Beef: Season the beef cubes with salt and pepper, then coat lightly with flour.
  2. Brown the Beef: Heat olive oil in a Dutch oven and brown the beef in batches. Set aside.
  3. Sauté Onion and Garlic: In the same pot, cook onion until softened, then add garlic and tomato paste.
  4. Deglaze and Simmer: Deglaze the pot with red wine, return beef to the pot, pour in beef broth, add vegetables, herbs, and Worcestershire sauce. Simmer covered until beef is tender.
  5. Add Peas and Garnish: Stir in peas, remove bay leaves, and garnish with parsley before serving.
