- 2 lbs beef chuck, cut into 1-inch cubes

- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons tomato paste
- 4 cups beef broth
- 1 cup dry red wine (or additional broth)
- 4 carrots, peeled and sliced
- 3 celery stalks, sliced
- 3 medium potatoes, peeled and diced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 tablespoon Worcestershire sauce
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Prepare the Beef: Season the beef cubes with salt and pepper, then coat lightly with flour.
- Brown the Beef: Heat olive oil in a Dutch oven and brown the beef in batches. Set aside.
- Sauté Onion and Garlic: In the same pot, cook onion until softened, then add garlic and tomato paste.
- Deglaze and Simmer: Deglaze the pot with red wine, return beef to the pot, pour in beef broth, add vegetables, herbs, and Worcestershire sauce. Simmer covered until beef is tender.
- Add Peas and Garnish: Stir in peas, remove bay leaves, and garnish with parsley before serving.
