Dry Ingredients
- 1 cup sugar
- 1/3 cup unsweetened cocoa powder
- 3 cups quick oats
Wet Ingredients
- 1/2 cup milk
- 1/2 cup butter
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
Instructions
- Combine base ingredients: In a medium saucepan, combine sugar, milk, butter, and unsweetened cocoa powder.
- Bring to a boil: Heat the mixture over medium heat, stirring occasionally until it comes to a rolling boil.
- Boil briefly: Maintain a boil for 1 minute, stirring constantly to prevent burning and ensure even cooking.
- Add remaining ingredients: Remove the saucepan from heat and immediately stir in the quick oats, peanut butter, and vanilla extract until fully incorporated.
- Shape cookies: Using a spoon, drop the cookie mixture onto wax paper in small mounds.
- Cool and set: Allow the cookies to cool at room temperature until they are firm and set, about 20-30 minutes.
Notes
- Use quick oats for best texture; old-fashioned oats can be used but the texture will be chewier.
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Refrigerate the cookies to speed up setting if desired.
- Store cookies in an airtight container at room temperature for up to 5 days.
- Be careful not to over-boil the sugar mixture as it can become too hard once cooled.
