Ingredients

For the cake:

1 ¾ cups all-purpose flour; 3/4 cup unsweetened cocoa powder; 1 ½ teaspoons baking powder; 1 ½ teaspoons baking soda; 1 teaspoon salt; 2 cups granulated sugar; 2 large eggs; 1 cup whole milk; 1/2 cup vegetable oil; 2 teaspoons vanilla extract; 1 cup boiling water

For the strawberry filling:

2 cups fresh strawberries, diced; 1/4 cup granulated sugar; 1 tablespoon cornstarch; 1 tablespoon lemon juice

For the frosting:

1 cup unsalted butter, softened; 3 ½ cups powdered sugar; 1/2 cup unsweetened cocoa powder; 1/4 cup heavy cream; 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. Add wet ingredients: Add the eggs, milk, oil, and vanilla extract. Mix until smooth, then stir in the boiling water (batter will be thin).
  4. Bake the cakes: Divide the batter between the pans and bake for 30 to 35 minutes until a toothpick inserted comes out clean. Let cool.
  5. Make the strawberry filling: Cook strawberries, sugar, cornstarch, and lemon juice until thickened. Let cool.
  6. Prepare the frosting: Beat butter, add sugar, cocoa, cream, and vanilla until fluffy.
  7. Assemble the cake: Place a cake layer, spread strawberry filling, top with second layer, frost top and sides. Chill before serving.
