Ingredients
Scale
Chicken Salad
- 1 ½ pounds (680 g) shredded chicken, cooked and shredded (rotisserie chicken recommended)
- 1 ½ cups (180 g) chopped celery, fresh and crisp
- 1 ½ cups (225 g) red grapes, halved
- 2 green onions, thinly sliced
Dressing
- 1 cup (240 ml) mayonnaise, good quality recommended
- ¼ cup (60 ml) sour cream or ranch dressing
- 2 tablespoons (8 g) fresh dill, chopped
- 1 teaspoon (5 g) salt
- 1 teaspoon (2 g) black pepper
- Juice of 1 small lemon (approx. 1 tablespoon or 15 ml), freshly squeezed
Other
- 8 croissants, flaky and buttery with golden-brown exterior
Instructions
- Prepare the chicken mixture: In a large bowl, combine the shredded chicken, chopped celery, halved red grapes, and thinly sliced green onions. Toss gently until the ingredients are evenly mixed. Set aside.
- Make the dressing: In a separate small bowl, whisk together mayonnaise, sour cream (or ranch dressing), chopped fresh dill, salt, black pepper, and freshly squeezed lemon juice until creamy and well combined.
- Combine chicken mixture and dressing: Pour the dressing over the chicken mixture in the large bowl. Gently stir with a spoon or spatula until the chicken and other ingredients are thoroughly coated with the dressing.
- Chill the chicken salad: Cover the bowl tightly with plastic wrap or a lid. Refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and develop fully.
- Prepare the croissants: Using a serrated knife, carefully slice each croissant in half horizontally, taking care not to tear the delicate pastry. If the croissants are too soft, freeze them for 10 to 15 minutes first to make slicing easier.
- Assemble the sandwiches: Spread about ½ cup (120 ml) of the chilled chicken salad evenly over the bottom half of each croissant. Place the top half of the croissant back on to complete the sandwich.
- Serve or store: Serve the chicken salad croissants immediately, or cover and refrigerate if preparing ahead of time. Enjoy chilled or at room temperature.
Notes
- Rotisserie chicken is recommended for ease and flavor, but leftover cooked chicken can be used.
- Freezing croissants for a short time before slicing can help achieve clean cuts without tearing.
- Adjust the seasoning of the dressing to taste before combining with chicken.
- For extra crunch, you can add chopped toasted almonds or walnuts to the chicken salad.
- These sandwiches are best consumed within 24 hours of assembly for optimal freshness.
