  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter

Instructions

  1. Prepare the Chicken: Season the chicken breasts well with salt and pepper, then dredge each piece in flour, shaking off any excess to coat evenly.
  2. Cook the Chicken: Heat olive oil and 2 tablespoons of butter in a skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and cook until they are browned and have released their moisture, about 5 minutes.
  4. Deglaze with Marsala Wine: Pour in the dry Marsala wine, scraping the bottom of the skillet to loosen any browned bits. Let the wine simmer for a couple of minutes to reduce slightly.
  5. Add Chicken Broth and Simmer: Pour in the low-sodium chicken broth, return the cooked chicken breasts to the skillet, and let everything simmer together for an additional 5 minutes to meld the flavors.
  6. Finish the Sauce: Stir in the remaining 2 tablespoons of unsalted butter until melted and the sauce is glossy and well combined.
  7. Serve: Plate the chicken and mushroom sauce immediately while warm, spooning extra sauce over the top for maximum flavor.
