Description
Chicken Marsala is a classic Italian-American dish featuring tender chicken breasts sautéed to a golden brown and simmered in a rich, savory Marsala wine and mushroom sauce. This flavorful recipe combines earthy mushrooms, buttery sauce, and sweet Marsala wine for a comforting and elegant meal perfect for weeknight dinners or special occasions.
Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- Flour for dredging
Sauce
- 8 ounces cremini or button mushrooms, sliced
- 3/4 cup dry Marsala wine
- 1/2 cup low-sodium chicken broth
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
Instructions
- Prepare the Chicken: Season the chicken breasts well with salt and pepper, then dredge each piece in flour, shaking off any excess to coat evenly.
- Cook the Chicken: Heat olive oil and 2 tablespoons of butter in a skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and cook until they are browned and have released their moisture, about 5 minutes.
- Deglaze with Marsala Wine: Pour in the dry Marsala wine, scraping the bottom of the skillet to loosen any browned bits. Let the wine simmer for a couple of minutes to reduce slightly.
- Add Chicken Broth and Simmer: Pour in the low-sodium chicken broth, return the cooked chicken breasts to the skillet, and let everything simmer together for an additional 5 minutes to meld the flavors.
- Finish the Sauce: Stir in the remaining 2 tablespoons of unsalted butter until melted and the sauce is glossy and well combined.
- Serve: Plate the chicken and mushroom sauce immediately while warm, spooning extra sauce over the top for maximum flavor.
Notes
- For best results, pound the chicken breasts to an even thickness before cooking to ensure uniform cooking.
- If Marsala wine is unavailable, dry sherry or a combination of white wine and a splash of brandy can be used as substitutes.
- Serve Chicken Marsala over pasta, mashed potatoes, or sautéed greens to create a complete meal.
- Make sure not to overcook the chicken to keep it juicy and tender.
- Use low-sodium broth to better control the salt level in the sauce.
