Instructions

  1. Season the chicken: Sprinkle both sides of the chicken breasts evenly with salt, pepper, and Italian seasoning to ensure the chicken is well-flavored.
  2. Sear the chicken: Heat olive oil and butter in a large skillet over medium-high heat. Once the butter has melted and the pan is hot, add the chicken breasts. Cook for 4-5 minutes on each side until the chicken is golden brown and fully cooked to an internal temperature of 165°F. Remove the chicken from the skillet and set aside.
  3. Sauté garlic: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  4. Deglaze the pan: Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Allow the broth to simmer for about 2 minutes to concentrate the flavors.
  5. Add cream and cheese: Stir in the heavy cream and grated Parmesan cheese. Continue cooking, stirring occasionally, until the sauce thickens and becomes creamy, approximately 3-5 minutes.
  6. Wilt the spinach: Add the fresh spinach to the skillet and stir frequently until the spinach wilts and softens, about 2 minutes.
  7. Combine chicken and sauce: Return the seared chicken breasts to the skillet. Spoon the creamy spinach sauce over the chicken and simmer everything together for an additional 5 minutes to meld the flavors.
