- Sear the chicken: Heat olive oil and butter in a large skillet over medium-high heat. Once the butter has melted and the pan is hot, add the chicken breasts. Cook for 4-5 minutes on each side until the chicken is golden brown and fully cooked to an internal temperature of 165°F. Remove the chicken from the skillet and set aside.

- Combine chicken and sauce: Return the seared chicken breasts to the skillet. Spoon the creamy spinach sauce over the chicken and simmer everything together for an additional 5 minutes to meld the flavors.
