For the Chicken Fajita Rice Bowl:

  • 1 pound boneless skinless chicken breasts, cut into thin strips
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro (optional)
  • avocado slices, sour cream, and shredded cheese for topping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook for 4–5 minutes until no longer pink.
  2. Add the bell peppers, red onion, and garlic to the skillet and cook for another 3–4 minutes until vegetables soften. Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper.
  3. Add the rice and stir to combine with the chicken and vegetables. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes.
  4. Remove from heat, fluff the rice with a fork, and stir in lime juice and cilantro if using. Serve warm with avocado, sour cream, and shredded cheese.

Notes

  • For a spicier bowl, add chopped jalapeños or hot sauce.
  • Brown rice can be used instead of white, but cooking time will increase.
