For the Soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 bay leaf
- ½ teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup stelline (star-shaped pasta)
- 2 cups cooked shredded chicken (breast or rotisserie)
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5–6 minutes until vegetables are softened.
- Stir in garlic and cook for another 30 seconds.
- Pour in the chicken broth and add the bay leaf, thyme, salt, and pepper. Bring to a boil.
- Add the star pasta and cook for about 6–8 minutes, or until tender.
- Stir in the shredded chicken and cook for another 2–3 minutes until heated through.
- Remove the bay leaf and season with additional salt and pepper to taste.
- Garnish with chopped parsley before serving if desired.
Notes
- Use alphabet pasta or orzo if stelline is unavailable.
- To make it gluten-free, use small gluten-free pasta.
