Description

This Chicken & Asparagus One Skillet Meal is a quick and flavorful dish that’s perfect for busy weeknights. Tender chicken and crisp asparagus are cooked together with garlic, lemon, and herbs for a delicious low-carb meal.

Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder

Asparagus:

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

Additional:

  • 3 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Juice of 1 lemon
  • 1 tablespoon fresh parsley, chopped
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. Season the chicken: Season chicken pieces with salt, pepper, and garlic powder.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. Cook the asparagus: In the same skillet, melt butter and add asparagus. Cook for 3–4 minutes until tender. Add garlic and red pepper flakes, cooking for 30 seconds.
  4. Combine: Return chicken to the skillet. Toss everything together. Squeeze lemon juice over the top, stir in parsley.
  5. Serve: Remove from heat and serve warm, garnished with grated Parmesan if desired.

Notes

  • You can swap asparagus for green beans or broccoli depending on what’s in season.
  • For extra flavor, deglaze the pan with a splash of white wine or chicken broth after cooking the asparagus.
