Ice Pop Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 1 cup lime juice (freshly squeezed preferred)
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tablespoon lime zest

Instructions

  1. Blend Ingredients: In a blender, combine the pitted cherries, lime juice, water, sugar, and lime zest. Blend the mixture until it is completely smooth to ensure a uniform texture for the ice pops.
  2. Fill Molds: Pour the blended mixture into ice pop molds, making sure to leave a little space at the top of each mold to allow for expansion as the liquid freezes.
  3. Insert Sticks and Freeze: Place ice pop sticks into each mold. Transfer the molds to the freezer and freeze for at least 4 hours, or until the ice pops are fully solidified.
  4. Release Ice Pops: To easily remove the ice pops from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the ice pops out and enjoy immediately or keep frozen until serving.

Notes

  • Use fresh cherries in season for the best flavor, or frozen cherries if fresh are unavailable.
  • Adjust the sugar amount based on the sweetness of your cherries or personal preference.
  • If you don’t have lime zest, finely grate the outer peel of the lime avoiding the white pith.
  • For a variation, add a handful of fresh mint leaves to the blender for a refreshing twist.
  • Store the ice pops in the freezer for up to 2 weeks for optimal freshness.
