A delicious and easy-to-make Cheesy Burrito Pie that layers seasoned ground beef, refried beans, cheese, and tortillas for a Tex-Mex inspired meal the whole family will love.

For the beef mixture:
- 1 lb ground beef
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 packet taco seasoning
- 1/2 cup water
Additional ingredients:
- 1 can (15 oz) refried beans
- 1 can (10 oz) diced tomatoes with green chilies (drained)
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- Chopped green onions and cilantro for garnish (optional)
Instructions
- Preheat and prepare: Preheat the oven to 375°F and grease a 9-inch round or square baking dish.
- Cook beef mixture: Brown ground beef and onion in a skillet. Add garlic, taco seasoning, and water. Simmer.
- Assemble layers: Layer tortillas, beef mixture, sour cream, and cheese three times in the baking dish. Top with tortilla and remaining cheese.
- Bake: Brush with olive oil, cover, and bake for 20 minutes. Uncover and bake for additional 5–10 minutes until bubbly.
- Rest and serve: Let it rest for 5 minutes before slicing. Garnish with green onions and cilantro.
Notes
- You can use ground turkey or plant-based meat for a lighter version.
- Add cooked rice or corn for extra texture.
- Leftovers store well and reheat easily.
