Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Cream butter and sugars: In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla.
  4. Combine wet and dry ingredients: Stir in the grated carrots. Add the dry ingredients to the wet and mix until combined.
  5. Stir in extras: Fold in oats, nuts, and raisins if using.
