Description

A delightful and refreshing Carrot Apple Salad that is perfect as a side dish or a light meal. This simple and healthy recipe combines the sweetness of apples with the crunch of carrots, all tossed in a tangy dressing.

Ingredients

Scale

Shredded Carrots:

  • 2 cups shredded carrots (about 3 medium carrots)

Apples:

  • 2 medium apples (such as Honeycrisp or Fuji), cored and diced or shredded

Raisins:

  • 1/3 cup raisins

Nuts (optional):

  • 1/4 cup chopped walnuts or pecans

Lemon Juice:

  • 2 tablespoons lemon juice

Greek Yogurt or Mayonnaise:

  • 2 tablespoons plain Greek yogurt or mayonnaise

Honey or Maple Syrup:

  • 1 tablespoon honey or maple syrup

Salt:

  • Pinch of salt

Instructions

  1. Toss Carrots and Apples: In a medium bowl, toss the shredded carrots and diced or shredded apples with lemon juice to prevent browning.
  2. Add Raisins and Nuts: Add in the raisins and nuts if using.
  3. Prepare Dressing: In a small bowl, whisk together the Greek yogurt (or mayo), honey (or maple syrup), and a pinch of salt until smooth.
  4. Combine: Pour the dressing over the carrot and apple mixture and toss until evenly coated.
  5. Chill and Serve: Cover and refrigerate for 15–30 minutes before serving to let the flavors meld. Serve chilled or at room temperature.

Notes

  • For a dairy-free version, use dairy-free yogurt or omit it and use a splash of lemon juice and honey.
  • You can also use dried cranberries instead of raisins for a tangy twist.
