Instructions
- Toast Walnuts: In a dry pan over medium heat, toast the roughly chopped walnuts for 3 to 4 minutes until they turn golden and become fragrant. Remove from the pan and set aside to cool.
- Prepare Chili-Honey Glaze: In a small saucepan, gently warm the honey, chili flakes, and lemon juice over low heat until the mixture is gently bubbling. Remove from heat and keep warm to allow flavors to meld.
- Pat and Sear Feta: Pat the feta cheese block dry with paper towels to remove excess moisture. Heat olive oil in a nonstick or cast-iron skillet over medium heat. Sear the feta for 2 to 3 minutes on each side, or until all sides are golden brown and slightly crisp.
- Caramelize Feta: While the feta remains in the skillet, carefully pour the hot chili-honey glaze over the cheese. Allow it to sizzle and begin to caramelize, coating the feta with a sticky, flavorful glaze.
- Garnish and Serve: Sprinkle the toasted walnuts, fresh thyme or rosemary if using, and cracked black pepper over the caramelized feta. Serve immediately with warm pita, flatbread, or crusty bread for dipping.
