  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup brewed espresso or strong coffee, cooled
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon caramel sauce (plus more for drizzling)
  • 1 teaspoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Optional Toppings:

  • sliced banana
  • whipped cream
  • extra caramel drizzle
  • cocoa nibs

Instructions

  1. Prepare the Oats: In a jar or airtight container, combine oats, milk, coffee, Greek yogurt, caramel sauce, chia seeds (if using), vanilla extract, and a pinch of salt. Stir well to combine.
  2. Chill Overnight: Cover and refrigerate overnight, or for at least 4 hours.
  3. Serve: In the morning, stir the oats and top with sliced banana, whipped cream, and an extra drizzle of caramel if desired. Enjoy cold, or microwave for 30–60 seconds if you prefer it warm.

Notes

  • Adjust the coffee strength to taste—decaf works too.
  • For a sweeter version, stir in an extra teaspoon of brown sugar or use flavored creamer in place of some of the milk.
