Instructions
- Sauté the Vegetables: Heat the olive oil and butter in a large pot over medium heat. Add the diced onion, green bell pepper, and celery. Cook for 4 to 5 minutes until the vegetables are softened and fragrant.
- Add Garlic and Sausage: Stir in the minced garlic and cook for about 30 seconds until aromatic. Then add the sliced smoked sausage and cook for an additional 3 to 4 minutes until it is lightly browned and the flavors meld together.
- Add Potatoes and Broth: Add the peeled and diced russet potatoes to the pot, then pour in the chicken broth. Season with Cajun seasoning, smoked paprika, salt, and black pepper. Stir well to combine all ingredients.
- Simmer Until Potatoes Are Tender: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 15 to 20 minutes. The potatoes should be tender and easy to pierce with a fork.
- Mash Some Potatoes: Use a potato masher to mash part of the potatoes directly in the pot. This will thicken the soup while still leaving plenty of chunks for texture.
