Description

This flavorful Cajun Chicken Alfredo combines tender, spice-coated chicken with a creamy Parmesan Alfredo sauce, complemented by fresh spinach and cherry tomatoes. Perfectly cooked fettuccine pasta ties everything together for a comforting, southern-inspired Italian dish that’s ready in just 35 minutes.

Ingredients

Scale

Main Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil (or butter for richer flavor)
  • 3 cups chicken broth
  • 8 oz fettuccine pasta
  • 1 cup heavy cream (or half-and-half for lighter option)
  • 1 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Optional Substitutions:

  • Swap chicken for shrimp or tofu (adjust cooking time accordingly)
  • Use homemade Cajun seasoning blend: paprika, garlic powder, cayenne, onion powder, oregano, thyme, salt, pepper

Instructions

  1. Prepare Chicken: Cut the chicken breasts into bite-sized pieces. Toss them thoroughly with the Cajun seasoning until all pieces are evenly coated, ensuring the spices penetrate the meat for full flavor.
  2. Cook Chicken: Heat olive oil in a large pot over medium-high heat. Add the seasoned chicken pieces and cook for 5 to 7 minutes until they are browned on the outside and cooked through. Once done, remove the chicken from the pot and set aside to keep warm.
  3. Cook Pasta: In the same pot, pour in the chicken broth and bring it to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, stirring occasionally to prevent the pasta from sticking to the bottom of the pot.
  4. Make Alfredo Sauce: Lower the heat to a gentle simmer. Stir in the heavy cream and grated Parmesan cheese slowly, mixing continuously until the sauce becomes smooth, creamy, and thickened, without lumps.
  5. Combine Ingredients: Return the cooked Cajun chicken to the pot along with the halved cherry tomatoes and baby spinach. Stir gently until the spinach wilts and the tomatoes soften slightly. Taste and season with salt and pepper as needed.
  6. Serve: Spoon the creamy Cajun Chicken Alfredo into serving bowls. Garnish each bowl with freshly chopped parsley and extra grated Parmesan cheese if desired. Serve immediately while hot for best flavor and texture.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • To make the dish vegetarian, replace chicken with tofu and ensure Cajun seasoning contains no animal products.
  • Use freshly grated Parmesan for best sauce texture and flavor.
  • Adjust Cajun seasoning amount to control spice level according to personal preference.
  • You can prepare the sauce ahead and reheat gently while stirring to avoid curdling.
