For the Cookie Bars:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup finely chopped roasted pistachios
- 1/4 cup pistachio paste (optional for added flavor)

Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Cream Butter and Sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add Wet Ingredients: Beat in the egg and vanilla extract (and pistachio paste if using) until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Prepare Dough: Fold in the chopped pistachios. Press the dough evenly into the prepared pan and smooth the top.
- Bake: Bake for 22 to 25 minutes, or until the edges are lightly golden and the center is set.
- Cool and Glaze: Let cool completely in the pan. In a small bowl, mix the powdered sugar with enough milk to make a smooth glaze. Drizzle the glaze over the cooled bars and sprinkle with extra chopped pistachios. Let the glaze set before slicing into bars.

- For a greener color and more intense flavor, use pistachio paste in the dough.
