For the Cookie Bars:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped roasted pistachios
  • 1/4 cup pistachio paste (optional for added flavor)
  • additional chopped pistachios for topping

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add Wet Ingredients: Beat in the egg and vanilla extract (and pistachio paste if using) until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Prepare Dough: Fold in the chopped pistachios. Press the dough evenly into the prepared pan and smooth the top.
  6. Bake: Bake for 22 to 25 minutes, or until the edges are lightly golden and the center is set.
  7. Cool and Glaze: Let cool completely in the pan. In a small bowl, mix the powdered sugar with enough milk to make a smooth glaze. Drizzle the glaze over the cooled bars and sprinkle with extra chopped pistachios. Let the glaze set before slicing into bars.
