Description

Delicious and easy-to-make Breakfast Stuffed Puff Pastry Bars filled with fluffy scrambled eggs, cheddar cheese, and your choice of savory breakfast meats and vegetables. Perfect for a quick morning meal or make-ahead brunch option.

Ingredients

Scale

Puff Pastry

  • 1 sheet frozen puff pastry (thawed)

Egg Mixture

  • 4 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled cooked bacon or breakfast sausage
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped spinach
  • 1 tablespoon chopped chives (optional)

Egg Wash

  • 1 egg (for egg wash)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat the oven to 400°F and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Eggs: In a bowl, whisk together the 4 eggs, milk, salt, and black pepper until well combined for a smooth egg mixture.
  3. Cook Eggs: Pour the egg mixture into a nonstick skillet over medium heat. Scramble gently until the eggs are just set but still soft, then remove from heat to avoid overcooking.
  4. Combine Filling: Stir the cooked eggs with shredded cheddar cheese, crumbled cooked bacon or sausage, diced bell pepper, chopped spinach, and optional chopped chives to create a flavorful filling.
  5. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut into 4 equal-sized rectangles.
  6. Assemble Bars: Spoon the egg filling evenly onto two of the pastry rectangles, leaving about a 1/2-inch border around the edges. Place the remaining two pastry rectangles on top of the filling pieces and press the edges firmly with a fork to seal the bars securely.
  7. Apply Egg Wash: Beat the remaining egg and brush the tops of the sealed pastry bars with this egg wash to achieve a golden, glossy finish once baked.
  8. Bake: Place the assembled bars on the prepared baking sheet and bake in the preheated oven for 18-20 minutes or until the pastry is puffy and golden brown.
  9. Cool and Serve: Let the bars cool slightly on a wire rack before slicing and serving warm for the best taste and texture.

Notes

  • Customize the filling by adding mushrooms, ham, feta, or other favorite breakfast ingredients.
  • These bars can be made ahead of time and reheated in the oven or air fryer for a quick breakfast.
  • For a vegetarian version, omit the bacon or sausage.
  • Ensure the puff pastry is fully thawed before rolling to prevent tearing.
