Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 400°F and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix Eggs: In a bowl, whisk together the 4 eggs, milk, salt, and black pepper until well combined for a smooth egg mixture.
- Cook Eggs: Pour the egg mixture into a nonstick skillet over medium heat. Scramble gently until the eggs are just set but still soft, then remove from heat to avoid overcooking.
- Combine Filling: Stir the cooked eggs with shredded cheddar cheese, crumbled cooked bacon or sausage, diced bell pepper, chopped spinach, and optional chopped chives to create a flavorful filling.
- Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut into 4 equal-sized rectangles.
- Assemble Bars: Spoon the egg filling evenly onto two of the pastry rectangles, leaving about a 1/2-inch border around the edges. Place the remaining two pastry rectangles on top of the filling pieces and press the edges firmly with a fork to seal the bars securely.
- Apply Egg Wash: Beat the remaining egg and brush the tops of the sealed pastry bars with this egg wash to achieve a golden, glossy finish once baked.
