Description

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F and lightly grease a mini muffin tin with melted butter or nonstick spray to prevent sticking.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk together buttermilk, egg, vanilla extract, and melted butter until the mixture is smooth.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix to keep the batter light and fluffy.
  5. Add Optional Ingredients: Fold in mini chocolate chips or blueberries if using, evenly distributing them throughout the batter.
  6. Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
  7. Bake: Bake in the preheated oven for 10–12 minutes, or until the tops turn lightly golden and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Let the pancake poppers cool for a few minutes in the tin before carefully removing. Serve warm, dusted with powdered sugar and accompanied by maple syrup for dipping.
