			Granola Crust
- 1 cup old fashioned oats
- 1/2 cup walnuts, finely chopped
- 2 tablespoons sesame seeds
- 3 tablespoons coconut oil, melted
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Filling and Topping
- 1 to 1 1/2 cups Greek yogurt, coconut yogurt, or almond yogurt
- 1 cup mixed fruit (strawberries, raspberries, blueberries, apples), chopped or sliced as needed
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the granola crust.
- Make Granola Mixture: In a large bowl, combine oats, finely chopped walnuts, sesame seeds, melted coconut oil, honey, vanilla extract, and ground cinnamon. Stir well until all the dry ingredients are fully coated with the wet mixture.
- Prepare Tart Pans: Lightly grease eight mini tart pans to prevent sticking. Press about 3 tablespoons of the granola mixture into each pan, firmly pressing across the bottom and up the sides to form the tart shell.
- Bake Crusts: Place the tart pans in the oven and bake for 15-17 minutes or until the crusts turn a golden brown color, indicating they are crisp and cooked through.
- Shape the Crusts: While the crusts are still hot, use the back of a spoon to gently press the centers down and reshape the sides to create an even tart shell.
- Cool Completely: Allow the tarts to cool completely in the pans before carefully removing them. This ensures the crust remains firm and intact.
- Add Yogurt Filling: Spoon 3 to 4 tablespoons of your chosen yogurt into each tart shell, smoothing the tops evenly.
- Top with Fresh Fruit: Arrange a colorful and fresh assortment of mixed fruits over the yogurt, creating an appealing and tasty topping.
- Serve: Serve immediately to maintain the crispiness of the granola crust and enjoy a fresh, healthy breakfast tart.
Notes
- You can substitute walnuts with pecans or almonds for different flavors and textures in the crust.
- Use coconut yogurt for a dairy-free and vegan option.
- To keep the crust crispy longer, serve these tarts fresh rather than making them too far in advance.
- Fruit toppings can be varied seasonally to include peaches, kiwi, or mangoes depending on availability.
- For added sweetness, drizzle a little extra honey over the fruit topping just before serving.
