Beef Barbacoa:

  • 3 pounds beef chuck roast, cut into large chunks
  • 3 tablespoons vegetable oil
  • 1 white onion, chopped
  • 4 cloves garlic, minced
  • 3 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup fresh lime juice
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cloves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 1/2 cups beef broth
  • 2 bay leaves

Instructions

  1. Preheat Oven: Preheat oven to 325°F (160°C).
  2. Sear Beef: Brown beef chunks in a Dutch oven. Set aside.
  3. Cook Aromatics: Cook onion until softened. Add garlic.
  4. Add Flavor: Stir in chipotle peppers, adobo sauce, vinegar, lime juice, and spices.
  5. Braise: Return beef to pot with broth and bay leaves. Braise in oven for 3-3.5 hours.
  6. Shred Beef: Remove bay leaves, shred beef, and coat in sauce.
