Beef Barbacoa:
- 3 pounds beef chuck roast, cut into large chunks
- 3 tablespoons vegetable oil
- 1 white onion, chopped
- 4 cloves garlic, minced
- 3 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce
- 1/4 cup apple cider vinegar
- 1/4 cup fresh lime juice
- 1 tablespoon ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon ground cloves
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 1/2 cups beef broth
- 2 bay leaves
Instructions
- Preheat Oven: Preheat oven to 325°F (160°C).
- Sear Beef: Brown beef chunks in a Dutch oven. Set aside.
- Cook Aromatics: Cook onion until softened. Add garlic.
- Add Flavor: Stir in chipotle peppers, adobo sauce, vinegar, lime juice, and spices.
- Braise: Return beef to pot with broth and bay leaves. Braise in oven for 3-3.5 hours.
- Shred Beef: Remove bay leaves, shred beef, and coat in sauce.
