Salmon:

  • 4 salmon fillets (6 oz each), skinless
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the filling:

  • 1 tablespoon butter
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/3 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon plain Greek yogurt or sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat oven to 400°F (200°C).
  2. Prepare the blackened seasoning: In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
  3. Prepare the filling: In a skillet, melt butter and sauté garlic. Add spinach and cook until wilted. Remove from heat, stir in cream cheese, Parmesan, and Greek yogurt. Season with salt and pepper.
