Berry Brûlée Ingredients:
- 2 cups mixed fresh berries (strawberries, raspberries, blueberries, blackberries)
- 1 cup vanilla Greek yogurt or pastry cream
- 2 tablespoons granulated sugar
- Fresh mint leaves (for garnish)
Instructions
- Prepare the Berries: Divide the berries evenly between two shallow ramekins or small oven-safe bowls.
- Caramelize the Sugar: Sprinkle 1 tablespoon of granulated sugar over each serving in an even layer. Using a kitchen torch, carefully brûlée the sugar by moving the flame in small circles until it melts and turns golden brown and crisp.
Spoon the vanilla yogurt or pastry cream over the top of the berries, spreading it evenly.
Let it cool for 1–2 minutes to allow the sugar to harden. Garnish with fresh mint and serve immediately.
Notes
- For a dairy-free version, use coconut yogurt.
- If you don’t have a kitchen torch, place the ramekins under a broiler for 1–2 minutes, watching closely to avoid burning.
