- 1 1/2 cups shredded cabbage (green or mixed)
- 1 ripe peach, thinly sliced or julienned

- 1 teaspoon honey
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh cilantro
Instructions
- Prepare the Beef: Heat olive oil in a large skillet. Cook onion until softened, then add garlic and ground beef. Cook until browned. Season with chili powder, cumin, smoked paprika, salt, pepper, tomato paste, and water. Simmer until thickened.
- Make the Peach Vinegar Slaw: Combine cabbage and peach. Whisk vinegar, honey, olive oil, and salt. Toss with cabbage and peach. Let sit for 5–10 minutes. Stir in cilantro.
- Assemble the Tacos: Warm tortillas. Fill with seasoned beef and top with peach slaw. Serve immediately.
