Description

  • 2 lbs beef chuck, cut into 2-inch cubes
  • 2 tablespoons olive oil

For the Stew:

  • 1 large onion, chopped
  • 6–8 pearl onions, peeled
  • 4 cloves garlic, minced
  • 1/2 cup red wine
  • 1/4 cup red wine vinegar
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 cinnamon stick
  • 4–5 whole cloves
  • 1/2 teaspoon ground allspice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • Salt and black pepper to taste
  • 1/2 cup water or beef broth
  • Chopped fresh parsley for garnish

Instructions

  1. Sear the Beef: Heat olive oil in a Dutch oven, brown beef, and set aside.
  2. Sauté Aromatics: Cook chopped onion, garlic, pearl onions, and tomato paste.
  3. Deglaze: Add red wine and vinegar, then stir in crushed tomatoes, spices, and water/broth.
  4. Simmer: Return beef to the pot, season, cover, and simmer for 2-2.5 hours.
  5. Finish and Serve: Remove spices, garnish with parsley, and serve hot.
