Beef Marinade

- 3 tablespoons oyster sauce
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon dark soy sauce
- 2 teaspoons sugar
- 2 teaspoons rice vinegar
- 1 teaspoon sesame oil
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large onion, sliced
- 2-inch piece of ginger, julienned
- 8 ounces mushrooms, quartered
- 3 green onions, sliced (for garnish)
Instructions
- Prepare Beef: In a bowl, combine the thinly sliced ribeye steak with baking soda, cornstarch, and soy sauce. Mix well and set aside to marinate briefly, which will tenderize the beef and add flavor.
- Make Sauce: In another bowl, whisk together oyster sauce, low-sodium soy sauce, dark soy sauce, sugar, rice vinegar, and sesame oil. Set this stir-fry sauce aside for later use.
- Heat Oil and Cook Beef: Heat olive oil in a large skillet or wok over high heat. Add the marinated beef, spreading it out in a single layer. Let it sear undisturbed for 2 minutes to develop a nice crust, then stir-fry until browned and cooked through.
- Add Aromatics and Vegetables: Add minced garlic, sliced onion, and julienned ginger to the skillet. Cook for about 1 minute until fragrant. Then add the quartered mushrooms and stir-fry until they soften slightly, about 2-3 minutes.
- Combine and Finish: Pour the prepared stir-fry sauce over the beef and vegetables in the skillet. Stir-fry everything together until well combined and the sauce thickens slightly, coating the ingredients beautifully.
- Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve immediately over steamed rice or noodles for a complete meal.
