- 1 cup barbecue sauce (Sweet Baby Ray’s recommended)
- 1 can (8 ounces) refrigerated crescent rolls or crescent sheet (or 8 ounces pizza dough)
- 1 cup shredded colby-jack cheese
- 1/3 cup chopped fresh cilantro (optional)
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 375° F (190° C). Grease a 9×13 inch baking pan with non-stick spray to prevent sticking during baking.
- Mix Chicken and BBQ Sauce: In a medium bowl, combine the cooked, shredded chicken breast with the barbecue sauce. Stir well until the chicken is evenly coated. Set this mixture aside.
- Roll Out Dough and Assemble: Unroll the crescent roll dough onto wax or parchment paper. Roll it out into a 12×15 inch rectangle to create an even layer. Spread the BBQ chicken mixture evenly over the dough, then sprinkle the shredded colby-jack cheese on top.
- Form the Roll: Starting from the longer edge, roll the dough tightly into a log, similar to rolling a cinnamon roll, ensuring the filling is enclosed.
- Cut and Arrange Rollups: Cut the rolled dough into 12 equal pieces using a sharp knife. Place these pieces cut-side up in the prepared baking pan, spaced evenly.
- Bake the Rollups: Bake in the preheated oven for 22 to 25 minutes, or until the dough is golden brown and fully cooked through.
- Rest and Serve: Remove the pan from the oven and let the rollups stand for 5 minutes to set. Serve warm, optionally garnished with chopped fresh cilantro.

- You can substitute crescent roll dough with pizza dough for a different texture.
- For added heat, mix some hot sauce into the barbecue sauce before combining with the chicken.
