  • 1/2 pound cooked, shredded chicken breast
  • 1 cup barbecue sauce (Sweet Baby Ray’s recommended)
  • 1 can (8 ounces) refrigerated crescent rolls or crescent sheet (or 8 ounces pizza dough)
  • 1 cup shredded colby-jack cheese
  • 1/3 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 375° F (190° C). Grease a 9×13 inch baking pan with non-stick spray to prevent sticking during baking.
  2. Mix Chicken and BBQ Sauce: In a medium bowl, combine the cooked, shredded chicken breast with the barbecue sauce. Stir well until the chicken is evenly coated. Set this mixture aside.
  3. Roll Out Dough and Assemble: Unroll the crescent roll dough onto wax or parchment paper. Roll it out into a 12×15 inch rectangle to create an even layer. Spread the BBQ chicken mixture evenly over the dough, then sprinkle the shredded colby-jack cheese on top.
  4. Form the Roll: Starting from the longer edge, roll the dough tightly into a log, similar to rolling a cinnamon roll, ensuring the filling is enclosed.
  5. Cut and Arrange Rollups: Cut the rolled dough into 12 equal pieces using a sharp knife. Place these pieces cut-side up in the prepared baking pan, spaced evenly.
  6. Bake the Rollups: Bake in the preheated oven for 22 to 25 minutes, or until the dough is golden brown and fully cooked through.
  7. Rest and Serve: Remove the pan from the oven and let the rollups stand for 5 minutes to set. Serve warm, optionally garnished with chopped fresh cilantro.

  • You can substitute crescent roll dough with pizza dough for a different texture.
