Description

This Banana Tarte Tatin is a classic French dessert featuring caramelized bananas baked under a golden puff pastry crust. The sweet, buttery bananas with a hint of vanilla extract create a luscious filling, while the crispy puff pastry provides a perfect contrast. Served warm, this tart is an elegant and comforting treat perfect for any occasion.

Ingredients

Scale

Banana Tarte Tatin Ingredients

  • 4 ripe bananas, peeled and sliced
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking the tart.
  2. Caramelize the Bananas: In an ovenproof skillet, melt the unsalted butter over medium heat. Add granulated sugar and cook for 5 to 7 minutes, stirring occasionally, until the sugar turns a golden brown caramel color. Carefully add the banana slices, vanilla extract, and a pinch of salt, then cook for another 3 to 4 minutes, allowing the bananas to soften and become caramelized.
  3. Assemble the Tart: Roll out the puff pastry if needed, and place the sheet over the caramelized bananas in the skillet. Gently tuck the edges of the pastry inside the skillet to encase the filling.
  4. Bake: Transfer the skillet into the preheated oven and bake for 20 to 25 minutes, or until the puff pastry is golden, puffed, and crisp.
  5. Invert and Serve: Once baked, remove the skillet from the oven and let the tart rest for a few minutes. Then carefully invert the tart onto a serving plate, so the caramelized bananas are on top. Serve warm for the best flavor and texture.

Notes

  • Use an ovenproof skillet to safely transfer from stovetop to oven.
  • Make sure bananas are ripe but firm to avoid mushiness during cooking.
  • Handle the caramel carefully to avoid burns as it is very hot.
  • Allow the tart to cool slightly before flipping to prevent breaking the pastry.
  • Serve with vanilla ice cream or whipped cream for added indulgence, if desired.
