Description

  • 3 ripe bananas, mashed

Dry Ingredients:

  • 1 1/2 cups old-fashioned oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and prepare a 12-cup muffin tin with liners or grease.
  2. Mix wet ingredients: In a large bowl, mash bananas and mix in eggs, honey, oil, milk, and vanilla.
  3. Combine dry ingredients: In another bowl, mix oats, flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients: Add dry ingredients to the wet mixture and stir until just combined. Fold in walnuts or chocolate chips.
  5. Bake: Divide batter into muffin cups and bake for 18-22 minutes until a toothpick comes out clean.
