Chicken Wings:

Marinade:

  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 2 teaspoons allspice
  • 1 teaspoon ground thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon smoked paprika
  • ½1 teaspoon cayenne pepper (to taste)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • juice of 1 lime
  • 1 tablespoon soy sauce
  • 2 tablespoons Jamaican jerk seasoning or paste (store-bought or homemade)

Garnish:

  • Chopped green onions and lime wedges

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Marinate: In a large bowl, toss the chicken wings with oil, lime juice, soy sauce, brown sugar, jerk seasoning, and all the spices until evenly coated. Let marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
  3. Bake: Arrange the wings in a single layer on the prepared baking sheet. Bake for 40–45 minutes, turning once halfway through, until the wings are golden brown, crisp, and fully cooked.
  4. Broil: Broil for an additional 2–3 minutes if extra crispiness is desired.
  5. Garnish: Garnish with chopped green onions and serve with lime wedges.
