White Fish Fillets:

  • 1 1/2 pounds white fish fillets such as cod, haddock, or tilapia, cut into 1-inch wide strips

Breading:

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons milk
  • 2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • lemon wedges and tartar sauce for serving

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. Prepare Breading Stations: Set up three shallow dishes – one with the flour, salt, and pepper; one with the eggs and milk; and one with the panko breadcrumbs, Parmesan cheese, paprika, garlic powder, and onion powder.
  3. Coat the Fish: Dredge each fish strip in the flour, then dip in the egg mixture, and coat with the breadcrumb mixture.
  4. Bake: Arrange the coated fish sticks on the baking sheet, spray the tops with cooking spray, and bake for 14 to 16 minutes, flipping halfway through.
  5. Serve: Serve hot with lemon wedges and tartar sauce.

  • For extra crunch, broil the fish sticks for 1 to 2 minutes at the end of baking.
