For the Topping:
- 1/2 cup rolled oats
- 1/3 cup whole wheat flour
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup natural peanut butter
- 2 tablespoons coconut oil or unsalted butter, melted
Instructions
- Preheat the oven and prepare the baking dish: Preheat the oven to 350°F and lightly grease an 8×8-inch baking dish.
- Prepare the apple filling: In a large bowl, toss the sliced apples with lemon juice, cinnamon, whole wheat flour, and maple syrup until well coated. Spread the apple mixture in the baking dish.
- Make the topping: In a separate bowl, combine oats, whole wheat flour, brown sugar, cinnamon, and salt. Add peanut butter and melted coconut oil or butter, and stir until crumbly. Sprinkle the topping over the apples.
- Bake: Bake for 35–40 minutes until apples are soft and bubbling, and topping is golden brown. Let cool slightly before serving.
