  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can diced tomatoes (undrained)
  • 1 cup beef broth or water
  • 1 1/2 cups elbow macaroni (uncooked)
  • 1 cup shredded cheddar cheese (optional)
  • chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add diced onion and cook for 3–4 minutes until softened, then stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for 1 minute until fragrant.
  3. Stir in tomato paste and cook for another minute. Add tomato sauce, diced tomatoes, and beef broth, stirring to combine.
  4. Bring to a boil, then stir in elbow macaroni. Reduce heat to a simmer, cover, and cook for 12–15 minutes or until pasta is tender, stirring occasionally.
  5. If desired, stir in shredded cheddar cheese until melted. Garnish with chopped parsley and serve warm.

Notes

  • You can swap ground beef with ground turkey or use whole wheat pasta for a healthier version.
  • Add red bell peppers or mushrooms for extra veggies.
  • Leftovers reheat well and make great next-day lunches.
