- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon tomato paste
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can diced tomatoes (undrained)
- 1 cup beef broth or water
- 1 1/2 cups elbow macaroni (uncooked)
- 1 cup shredded cheddar cheese (optional)

- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add diced onion and cook for 3–4 minutes until softened, then stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for 1 minute until fragrant.
- Stir in tomato paste and cook for another minute. Add tomato sauce, diced tomatoes, and beef broth, stirring to combine.
- Bring to a boil, then stir in elbow macaroni. Reduce heat to a simmer, cover, and cook for 12–15 minutes or until pasta is tender, stirring occasionally.
- If desired, stir in shredded cheddar cheese until melted. Garnish with chopped parsley and serve warm.
Notes
- You can swap ground beef with ground turkey or use whole wheat pasta for a healthier version.
- Add red bell peppers or mushrooms for extra veggies.
- Leftovers reheat well and make great next-day lunches.
