Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus more for dusting)
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 cup finely ground almonds or almond flour
- 1/4 teaspoon salt
Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cream butter and sugar: In a large mixing bowl, cream the butter and powdered sugar until light and fluffy. Add the vanilla and almond extracts and mix well.
- Prepare dough: In a separate bowl, whisk together the flour, ground almonds, and salt. Gradually stir the dry ingredients into the butter mixture until a soft dough forms.
- Shape and bake: Scoop about 1 tablespoon of dough at a time and shape it into small crescents. Place on the prepared baking sheets, spacing about 1 inch apart. Bake for 12–14 minutes, or until the bottoms are lightly golden and the cookies are set.
- Finish: Let the cookies cool for 5 minutes, then gently roll or dust them with powdered sugar while still slightly warm. Cool completely before serving.
Notes
- These cookies keep well in an airtight container for up to a week and freeze beautifully.
- For extra flavor, toast the ground almonds before using.
