Dough:
- 3 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 teaspoons) instant yeast
- 1/2 teaspoon salt
- 4 large eggs, at room temperature
- 1/2 cup whole milk, warmed
- 10 tablespoons unsalted butter, softened and cut into pieces
Filling:
- 1 cup raspberry jam or preserves
- 1 cup fresh raspberries
Egg Wash:
- 1 egg
- 1 tablespoon water
Instructions
- Mix Dough: In a stand mixer, combine flour, sugar, yeast, and salt. Add eggs and warm milk. Mix until dough forms.
- Knead Dough: Increase speed, knead for 5–7 minutes. Gradually add butter, knead for 10 more minutes.
- Rise Dough: Let rise until doubled, about 1 to 1 1/2 hours.
- Assemble: Roll out dough, spread jam, add raspberries, roll into a log, slice lengthwise, twist, place in loaf pan.
- Rise Again: Cover and let rise for 45 minutes.
- Bake: Preheat oven to 350°F (175°C). Brush loaf with egg wash. Bake for 40–45 minutes.
- Cool: Let cool before slicing.
Notes
- You can use store-bought or homemade raspberry jam.
- If using frozen raspberries, thaw and drain them first.
- The loaf can be made a day ahead and gently reheated.
