Instructions
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the cauliflower florets and cook for 5–6 minutes, stirring occasionally, until they start to soften and brown slightly.
- Add the sliced mushrooms, thyme, smoked paprika, salt, and pepper. Continue cooking for another 6–8 minutes, stirring occasionally, until the mushrooms release their moisture and both the cauliflower and mushrooms are tender.
- If using, stir in lemon juice and sprinkle with fresh parsley before serving.
- Serve hot as a side dish or light main course.
